Unca' John's BBQ Pork Loin
2-3 lb Pork Loin Roast
2 Tablespoons or more Unca’ John’s BBQ Dry Rub
1 Cup BBQ Sauce
Tie up the roast to keep its shape. Sprinkle Unca’ John’s BBQ Dry Rub on all sides of
roast and rub it in. Put roast in zip lock bag and refrigerate 4 hrs to overnight. Remove
roast from bag, sprinkle with more Unca’ John’s BBQ Dry Rub if desired, and let the
roast come to room temperature covered.
Prepare smoker. If using grill, prepare it for indirect heat: place a drip pan in the center
and scatter hot coals around it. (On a gas grill with 2 or more burners, turn 1/2 of the
burners on and leave 1/2 off. Place the drip pan over the burners that are off. Wrap
soaked wood chips in foil and put over burners that are on.)
Place the roast fat-side up over the drip pan. Smoke or grill on Med-Hi heat (approx.
350oF) for 1 1/2 hr or until internal temp of roast is 140oF. Baste with BBQ sauce
during last 1/2 hr, turning meat once.
Remove roast from smoker/grill, cover with foil, and let stand for 15 min. Slice and
enjoy!
