Unca' John's Southwestern Grilled Flat-iron Steak
1 Flat-iron Steak
2 teaspoons Apple Cider Vinegar
1 teaspoon Worcestershire Sauce
3 Tablespoons Unca’ John’s BBQ Dry Rub

Stir Cider Vinegar, Worcestershire Sauce, and Unca' John's BBQ Dry Rub together in a small mixing bowl until the mixture has the consistency of a paste. Let stand at room temperature covered for 10 min.

Place steak in a dish large enough for it to lay flat. Stir the marinade one more time, and pour it over the steak. Turn the steak in the marinade until it is completely coated. Cover and refrigerate for 30 min. (You can marinade the steak longer, but the taste of the Dry Rub will intensify considerably.) Let steak return to room temperature before grilling.

Prepare grill for indirect heat. Place steak over flame for 2 min to sear. Flip steak over and sear the other side for 2 min more. Move steak off flame to indirect heat and cook for 5 to 15 min on Med-Hi heat (approx. 400oF) to desired doneness. Remove steak to cutting board, cover with foil, and let rest 10 min. Carve on the bias and serve.
