Unca' John's BBQ
Unca' John's BBQ Whole Chicken
1– 5 to 6 lb Whole Fryer or Roaster
2 Tablespoons or more Unca’ John’s BBQ Dry Rub
1 Cup BBQ Sauce (optional)
Wash chicken thoroughly and drain. Sprinkle Unca’ John’s BBQ Dry Rub inside the
cavity. To hold its shape, tie up the legs and bend the wings back behind the breasts.
Sprinkle the outside of the chicken with more Unca’ John’s BBQ Dry Rub, cover and
refrigerate 4 hrs to overnight. Remove chicken from refrigerator and let come to room
temperature covered. If desired, stuff cavity with sliced apple or lemon and onion.
Prepare smoker or set up grill for indirect heat. Smoke/grill chicken on Med-Hi heat
(approx. 350oF) breast-side down for 40 min. Turn breast-side up and smoke/grill for 1
hr longer. Begin brushing with BBQ sauce during the last 1/2 hr if desired.
Remove chicken from smoker/grill, tent with foil, and let stand 15 min.
Carve and enjoy!
